Description

- Tasting Profile

Peñas Blancas is a coffee processing plant established by Johan of Las Flores Farm in the Acevedo region, which is home to many small-scale producers.
By specializing in micro-lots using unique processing methods, we are contributing to the improvement and development of coffee quality in the Acevedo region.
The lot we're introducing today is a Geisha variety called "Floral Symphony," produced using a process that combines aerobic and anaerobic fermentation.
Its appeal lies in the unique flavor created by a special process, reminiscent of blueberries, cantaloupe melon, and passion fruit, and the well-balanced floral and citrusy notes characteristic of Geisha whisky.

About the farm

Peñas Blancas is the name of a processing plant established by Johan of Las Flores Farm, which buys and processes cherries from small-scale producers in the Acevedo region.
Small-scale producers often lack their own processing facilities, and despite producing high-quality cherries, they may not be able to fully realize their potential due to a lack of process knowledge and skills.
It was established with the aim of increasing the value of coffee by creating a processing plant with superior processing technology for small-scale producers in the Acevedo region.

About the process

"Floral Symphony" is a fermentation style designed to bring out the floral aroma of the Geisha variety.
After 24 hours of aerobic fermentation, the mixture undergoes a thermal shock treatment (component fixation using temperature differences) in a BioMaster tank with hot water containing cherry extract and juice, and then the juice is circulated for 60 hours of fermentation.
