Description

- Tasting Profile

We present a batch made from coffee from small producers in Hayma Dakiliya, west of Sana'a, in central Yemen.

The variety is Yemenia, and the process is the Alchemy Process by Kima Coffee.
A combined aerobic and anaerobic fermentation process allows the terroir and varietal characteristics to be fully exploited.

Its greatest features are its unique incense-like aroma, which is unique to Yemeni coffee, and the flavors of Western liquors such as amaretto and whiskey, which are the result of a complex fermentation process.
The rounded, smooth taste makes it pleasant to drink, and the lingering aroma is impressive.

We recommend slowly savoring the structured, deep flavor until it cools.

About the process

The Alchemy Process is Kima Coffee's proprietary production process that combines highly controlled aerobic and anaerobic fermentation with a meticulous drying process to enhance the flavors revealed by the terroir.
This batch underwent 12 hours of aerobic fermentation, followed by 24-48 hours of carbonic maceration in stainless steel tanks, and then 36-48 hours of anaerobic fermentation.
The wood is dried in a shaded African bed for 48 hours, then moved to a regular African bed where it is dried slowly for about 25 days.

About the farm

Small-scale producers in Yemen live in mountainous areas isolated from cities.
In addition to growing coffee and other commercial crops, there is a lot of work involved, such as raising livestock and securing water, and many producers have been working in agriculture since they were young.
Yemen's coffee culture is a precious heritage, with many small producers passing on knowledge and traditions for generations.
