About the farm
This farm was established in 2007 by Stefano Um, a Korean immigrant.
The farm started in Sul de Minas, but since 2019, they have also been cultivating coffee in Espírito Santo.
In 2015, I founded Umu Coffee, a company that not only produces coffee but also operates a roastery and cafe, continuously pursuing high-quality Brazilian coffee through direct trade.
Boram, the son who joined Umu Coffee, achieved further success when he won the 2023 World Barista Championship.
About the process
After 48 hours of anaerobic fermentation, a drying process is carried out in a temperature-controlled dark room.
