About the process

This is a traditional, natural process, involving 5 days of sun drying on a patio followed by 24 days of drying on African beds under 75% shade.
Instead of spreading the cherry wood directly on the concrete on the patio, we spread it on a breathable sheet to dry.

About the farm

The Mierich family, a renowned coffee family in Nicaragua, operates nine farms in Nicaragua and three in Honduras, and their coffee is highly regarded in the Cup of Excellence competitions of both countries.
El Limoncillo is a farm that started in 1930 and is said to be the second oldest of the family's farms. It got its name because there were lemon trees growing there when the farm was started.
We are actively working towards sustainable coffee production through thorough and rigorous quality control and production management, while also developing power generation facilities that utilize abundant water resources, and improving working conditions such as childcare facilities and clinics for workers.
The Javanica variety is a longberry variety (with long, slender fruit and seeds) originating from a wild native species in Ethiopia. It was given this name because it was brought to Nicaragua from Java.
.
This farm began cultivating this variety in 2001, and its victory in the 2008 Cup of Excellence competition made it one of Nicaragua's leading varieties.
